As the Commercial Director, Harriette Geenhalgh Ward, explains, Meat Emporium's commitment to vertical integration and minimising waste has propelled the business to new heights, particularly through its venture into online sales in the Amazon store. What started as an effort to find a use for leftover tallow has blossomed into a booming side business, with customers clamouring for this premium, locally-sourced product.
The Meat Emporium Experience
Meat Emporium's bustling butcher shop is the ultimate wonderland for Meat lovers! The giant walk-in cooler and expansive selection of products, from packets of lamb chops to large cuts of Wagyu and Angus beef, create an immersive and engaging shopping experience.
But Meat Emporium is more than just a premium butcher. It's recently expanded next door to open a cafe, where they use its own high-quality meats for burgers, sausage rolls, and other delicious offerings.

Doing it for themselves
Meat Emporium has been a fixture in the Alexandria neighbourhood for years, with this family-run business bringing its farming and butchery experience to satisfy the appetites of local carnivores.
"When we took over the shop back in 2019, we knew we wanted to do things a bit differently, we already had our own cattle farm down south, so we made the decision to bring our whole supply chain in-house. Now we're doing the whole process ourselves before selling the cuts right here in the shop."

Innovative Waste Reduction
This commitment to vertically integrated, paddock-to-plate operations has paid dividends, with customers flocking to Meat Emporium for its premium Angus and Wagyu beef offerings. But it's what they've done with the parts of the animals that don't end up as premium steaks that has really got people talking. Meat Emporium has been selling its homemade tallow on Amazon, and the response has been overwhelming.
"We quickly realised that we had this amazing product in the form of beef tallow that we could do something with. Rather than just throw it away, we started rendering it down and selling it and the demand has been incredible."

Reaching new customers with Amazon
The secret to its success, she believes, lies in its ability to offer a premium, locally-sourced product at a competitive price. The business has received a large amount of traffic to its products, they are blown away by the demand in the Amazon store and Amazon has become a successful new avenue for its business model.
We just started and we've been blown away by how much traction we've got, who knows, maybe one day we'll be exporting our Aussie beef tallow all around the world through Amazon. The potential is certainly there."
